Top Tier: Holy Goat La Luna Barrel
Milk: Goat | Type: soft, bloomy rind | Origin: Victoria
Holy Goat is an award-winning beautifully handcrafted goat cheese made on Sutton Grange Organic Farm, which is situated east of Castlemaine on 200 acres of rolling granite plains. La Luna Barrel has a slightly denser paste with a yeast based rind. Its flavour is a little goaty, tangy and peppery.
Second Tier: Delice des Cremiers
Milk: cow | Type: soft, bloomy rind | Origin: France
This decadent triple cream from Burgundy is made with whole milk enriched with extra cream. It's incredibly rich and has a melt-in-the-mouth texture that delivers creamy flavours and finishes with a mild tanginess. The complexity of this cheese belies its delicious ooziness.
Bottom Tier: Fourme D'Ambert
Milk: Cow | Type: Blue vein | Origin: France
Produced in the Auvergne region, Fourme d'Ambert is one of France's oldest cheeses, dating back to the Roman occupation nearly 1,000 years ago. It is more supple and dense than most blues. Milk from cows grazing on either lower or higher mountain pastures is used to produce the cheese.
